- 5 Tablepoons of extra Virgin Olive Oil
- 1 White Onion
- 4 Italian fresh tomato pealed and chopped
- Add 1 tespoon crushed Bay Leaf
- 2 tablesppons crushed Garlic
- 1 1/2 cup of Kale
- 1 Zucchini Squash
- 1 tablespoon Black Pepper
- 7 oz Tomato Paste
- 16 oz Beef Stock
- 2 cut White Potatoes
- 1 cup of Ziti Pasta
- 1 teaspoon Oregano
- 1 teaspoon Celery Seed
- Salt to taste
- Parmesan Grated Cheese
Cooking Instructions For Tuscan Minestrone Soup Recipe
This is The Bald Chef’s recipe Tuscan Minestrone Soup Recipe. Tuscan Minestrone soup is made by soaking 1 cup of Dried White Kidney Beans soaked in water overnight. In a 5 quart Stock put add Add 5 Tablespoons of extra Virgin Olive Oil, 1 tespoon crushed Bay Leaf, 1 teaspoon Celery Seed, 1 teaspoon Oregano, 1 White Onion cut up, 4 Italian fresh tomato pealed and chopped, and the 7 oz Tomato Paste and cook over medium heat unil the Onion is translucent. Add the 16 oz Beef Stock, and 1 cup of Dried White Kidney Beans in water overnight, cook the soup mixture for 40 minutes. Add the 1 cup of Ziti Pasta, and 2 cut White Potatoes, and 3 cups of water and cook for 7 minutes. Add the chopped and clean 1 1/2 cup of Kale, and 1 Zucchini Squash cook for 7 more min. and salt to taste. Serve with Parmesan Grated Cheese.
