This is The Bald Chef’s recipe Cajun Pasta. Start ou making a good Roux with 1/4 Cup Cooking Oil, and 1/2 Cup Of Flour. This This Roux must be slow cooked to become a Chocolate Brown, and you know this will take time and practice. When your Cajun Roux is ready mix in the chopped 4 Deboned Chicken Thighs. Stir the Chicken in to the Roux. Quickly add the Holy Trinity of Cajun cooking Green Pepper, Onion, and Celery to the Roux mix. Temper the Roux with 1 can Petite Diced Tomatoes 15.25 oz and 1 cup of Water. Add 16 oz Fresh Mushrooms. To flavor the Cajun Sauce add the cut Cajun Andouille Sausages. Flavor the sauce with 1 Tablespoon Cayenne Pepper, 1 Tablespoon Cajun File Powder, and 1 Tablespoon Cajun Slap Your Mama Seasoning. Start Cooking the Penne Pasta per the instructions on the box or for an extra touch add fresh Pasta. As the Cajun Pasta sauce has cooked for about 30 minutes add your 1 Pound 16 count Gulf Shrimp.
