Cooking Instructions For Chinese Beef Szechuan. Start by cutting up your Celery,Carrots, and Beef in to matchstick slices. In a bowl add the 1 Pound of matchstick Beef,1 Egg white, 1 Tablespoon of Corn Starch and 2 Tabelspoons of Chinese Rice Wine, mix and se aside to room temp. In a Wok add 3 cups of water and bring to a boil, add the 1 cup of matchstick Celery, and the 1 cup of matchstick Carrots, cook for 1 minute and remove from the boiling water, set aside. In a clean Wok add 2 Tablespoons Cooking Oil bring to high heat and add the 2 Cloves Chopped Garlic,3 Szechuan Peppercorns and the prepared beef. Stir fry the mixture until the beef is almost cooked and add the blanched Celery and Carrots. Add 3 Tablespoons Soy Sauce, 1 Tablespoon of Chinese Chli Paste, and The 1 Tablespoon of Chinese Hoisin Sauce. Mix the Beef Szechuan on high heat and prepare 3 ozs of water with 2 Tablespoons of cornstarch and add to the stir fry to make a lite sauce. Serve with rice
