This is The Bald Chef’s recipe Indian Lamb Vindaloo Curry. Prepare 5 Cups of White rice (Traditional Basmati Indian Rice is the best). In a stock pot add 3 tablespoons of cooking oil and bring to a high heat. To the hot oil add 5 hot Asian chopped peppers, 3 1/2 tablespoons hot Indian Curry paste,3 Tablespoons of fresh minced Ginger, and 5 cloves of fresh Garlic cut fine. Fry the spices to release the oil and add the 2 pounds of cut Lamb and brown the meat. When the lamb is browned add 8 oz. of Tomato Sauce, and the 1 1/2 cups water and cook on medium heat for 45 minutes. The next step is to add the Large White Potato sliced into 1″ slices, and the 1 Cut Spanish Onion. Cook the mixture for an additional 15 minutes and serve on rice.
