Clean, and de-vein 6 jumbo shrimp. butterfly shrimp, and set aside. Take your Monterey Jack cheese, and Jalapeno peppers cut into 6 small slices. Stuff the shrimp with the Monterey Jack cheese, and Jalapeno peppers. Rap the shrimp with a slice of apple smoked bacon, and set with a toothpick. In A fry pan add 1 tablespoon virgin olive oil on med heat. Place the Cajun shrimp rap into the hot oil and saute on both sides.
