- 1 15 ounce can of Tomato Sauce
- 3 cloves of garlic
- 7 to 10 Mexican dried chili pods
- 1 cup of short grain rice
- 1 medium onion, cut up fine
- 2 poblano peppers
- teaspoon black pepper
- teaspoon cumin
Cooking Instructions For Mexican Red Rice
This is The Bald Chef’s recipe Mexican Red Rice. In a large stock pot bring 6 cups of water to a boil. Place 7 to 10 dried chili pods into the boiling water. Boil the chili pods until they are completely hydrated. Remove the chili pods from the water and remove the stems and set aside. In a blender place the hydrated chili pods, 3 close of garlic, add half a cup of water that was used to hydrate the chili pods, and 15 ounces of tomato sauce. Blend the chili pods mixture until thoroughly liquefied. In a stock pot, return the tomato chili sauce along with the chopped peppers and onions and boil for 30 minutes. In a medium-sized pan place 1 cup of short grain Spanish rice along with 1 1/2 cups of water, and half a cup of your tomato chili sauce. Bring to a boil. Lower the heat to medium low and place the lid on to the pot. Cook the rice for 20 minutes, checking to make sure that the Rice does not stick one time only. When the rice is finished. Stir all ingredients together and serve.
