Som Tum is traditionally made using a mortar and pestle. Som Tum is a great salad recipe from North Eastern Thailand. If you don’t have a large mortar and pestle, mince the Thai chili and garlic and combine all of the ingredients in a mixing bowl by hand. These are The Bald Chef’s Instructions to make real Thai Som Tom. Start out with a large mortar and pestle and add the 3 small clove of garlic,2 tablespoon chopped roasted peanuts, 4 Prik Kee Noo Thai peppers. Beat the ingredients into a paste using the mortar and pestle. Add the lime, and 3 tablespoons fish sauce (Nam Pla)to the pepper paste and mix. Add the 1 pound green Thai papaya grated, 2 strings long bean (cut into 1 inch lengths),1 tomato cut thin, 1 Tablespoon of Dried Shrimp. Mix all ingredients to make a real Som Tum Thai salad.
